The Catalan government’s Department of Business and Employment created this specialty distinction to encompass all these establishments.

Artisanal and traditional cooking, avant-garde dishes, unique recipes... there are proposals for all tastes but, more than anything, the gastronomic offer of these establishments includes a large representation of Catalan gastronomy, with local products and others with protected designation of origin or geographic indication. The dishes are prepared with at least 40% local ingredients from local producers. Four generations. It was the great-grandparents of the current generation who started serving meals in a tavern which, years later, went on to become a bed-and-breakfast and today is a hotel which conserves the warmth and friendly service of the previous generations. Ca l’Amagat feels like home. This gastrohotel situated in the lovely town of Bagà contains 18 rooms, a lounge and a restaurant where, every day and at every meal, its guests enjoy an avant-garde cooking style which never forgets the classics of mountain cuisine. This is the proposal of the inn Fonda Xesc, situated in a historic house from 1730 in Gombrèn, a small town in the province of Girona surrounded by incomparable scenery and considered practically a museum of the Middle Ages. In the Fonda, Francesc and Meritxell maintain the space’s most traditional meaning and offer what they believe in: cuisine with local products but subject to a process of updating in a menu which proposes 20 fresh dishes, with no-frills, friendly service, the reflection of a style which needs no additives to be effective.
